NBK’S OWN ORGANIC FREEZER BEEF
The
only "fertilizer" used on our pastures is the cattle's own manure. No
herbicides or pesticides are used and no antibiotics or growth hormones are
added to their feed; there is no chance that residues from these products will
travel up the food chain.
Our herd
is normally closed to any cattle not born here in order to minimize the
possibility of outside disease transmission. In 2007 we purchased a new
breeding bull, a registered pure bred Blonde d’Aquitaine
named Malamar and also a registered Blonde heifer. Malamar has a good disposition and fathered
nine heifers and two bull calves in 2008, weird, huh? Interestingly enough, we
had three sets of twins born in 2007 from our previous bull, but he had sired
too many daughters that we needed to keep for replacement cows.
We
sell our beef in quantity, either by the side (there are 2 sides from one
animal) or in 'split-sides', also referred to as 'quarters'. The latter consist
of one half of the front of the side and one half of the hind. The average
weight of a hanging side is 250 pounds and that of a split-side approximately
125 pounds. Our sides tend to be leaner and smaller in size than those commonly
used for store-bought beef.
To
give you an idea of what to expect, last year we asked Doug Groombridge, our
butcher, for a split- side quarter for the two of us. It consisted of the
following: 18 packages of lean ground beef (1 lb. pkgs.), 3 stewing beef, 2
braising ribs, 4 soup bones, 5 short ribs, 8 fettini cutlets, 10 one inch thick
T-bone steaks, 8 sirloin steaks, 6 rib steaks, and the following 3-4 pound
roasts: a rolled brisket, a rump, an eye of the round and tenderloin.
To
get an idea of freezer space you might need, our quarter this year took up a
space in our chest freezer 20" X 22" X 18"- 7920 cubic inches or
4.6 cubic feet.
The
price for the 2008-09 season was $3.19 for a split side (quarter) per pound and
$3.09 for a half. We are now taking orders for our next sale for 2009-2010.20.
The price has not yet been set. They will be available in December 2009 until
February 2010. If you are interested in placing an order, we can email or fax
you a specification form to fill out. You provide us with instructions and we
pass them on to Doug. We pay for the cost of cutting, wrapping, and freezing.
